Aqueous Extraction of Seed Oil from Mamey Sapote (Pouteria sapota) after Viscozyme L Treatment

In this study, aqueous enzymatic extraction (AEE) was evaluated during the process of obtaining oil from mamey sapote seed (OMSS). Viscozyme L enzyme complex used at pH 4 and 50 °C optimization by central composite design response surface methodology. Optimal conditions were: 3.5% (w/w) (regarding weight), 5.5 h incubation time, 235 rpm agitation rate, 1:3.5 solid-to-liquid ratio. These enabled us to obtain an OMSS yield 66%. No statistically significant differences were found in fatty acid profile physicochemical properties, such as iodine values percentage free acids, between obtained AEE or conventional solvent (SE). However, oxidative stability (11 h) higher than that SE (9.33 h), therefore, AEE, addition being environmentally friendly method, produces a superior quality terms stability. Finally, high content seed, oleic (around 50% total acid) oil, make it useful edible vegetable oil.
